Ingredients
- Spiced beef
- Fresh salsa and to serve
Method
- Make the salsa: mix the tomatoes, red onion and cilantro with the juice of half the lime and a pinch of salt.
- Heat the oil in a large pan over high heat. Brown the beef for about 5 minutes, breaking it up, and spoon off excess fat.
- Add the onion and garlic and cook for 3 minutes until softened.
- Stir in the spices and salt for 30 seconds, then add the water and simmer for 3–4 minutes until saucy and mostly absorbed.
- Warm the tortillas in a hot dry pan for 20–30 seconds per side and keep them wrapped in a clean towel.
- Fill each tortilla with beef, lettuce, salsa and cheese, and squeeze over a little lime.

Tips
- Stack two corn tortillas per taco so they don't tear.
- For a vegetarian version, swap the beef for two cans of drained black beans and cook just long enough to heat through.
